Quality Principles and Regulations

Protected Origin: The water must come from a protected groundwater aquifer and be microbiologically safe from the source, according to the Public Health Code.

Stability: Its mineral composition must remain stable and not undergo any chemical modification, prohibiting disinfection and heavy treatments.
Limited Physical Treatments: Only physical treatments (filtration/sedimentation to remove unstable elements such as iron or ozone for oxidation) are permitted, under strict conditions.

Controls and Analyses

Producer Self-Monitoring: Frequent analyses at the source, during production, and at the bottling stage to monitor hazards and critical control points.
Health Control by Regional Health Agencies (ARS): The Regional Health Agencies conduct unannounced inspections and sampling at the sites.
Controlled Parameters:
Microbiological: Indicator bacteria (coliforms, enterococci) to verify original purity.

Chemical: Minerals (calcium, sodium, etc.), nitrates, etc., to verify stability and the absence of pollutants.

Physical: pH, turbidity, color, odor.

Non-conformity management

Batch withdrawal: Only compliant batches are marketed.
Corrective actions: In case of a problem (especially microbiological), measures such as equipment cleaning or system flushing are taken, and further analyses confirm the resolution.
